Colour measurement and pigmentation of salmonids

A particular feature in salmonids is their orange to orange-red muscle colour, which derives from their ability to accumulate carotenoids in the muscle tissue. Spectral reflectance is a fast and non-destructive technique compared to traditional chemical analysis of carotenoids. However, correlating colour and pigmentation is complicated due to the translucent nature of fish muscle and requires multivariate analysis of spectrophotometric measurements to separate colour information from light scattering.
